This is how you can make fudgey brownie in 30 mins, needs no gluten, dairy or processed sugar. These came out more than delicious. It was also a fun activity to do with kids while we are all home because of COVID exposure in school!
The base is made of chickpeas, they are an excellent source of dietary fiber, which is vital for healthy digestion.
Tip- If you pre plan it, you can also soak them over night and make them with fresh chickpea rather than using a can!

450g cooked chickpea (you can use a can or soak your own)
1/2 cup maple syrup (you can use a little less if you don’t like too sweet)
1/2 cup almond butter
1 tsp vanilla extract
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup chocolate chips
1/2 cup walnuts (optional, I love the crunch)
2 tbsp cocoa powder
2 tbsp oats or oat flour
Preheat oven to 350F/ 175C
Add chickpeas and add to a food processor with all the ingredients except the chocolate chips
Once smooth add 3/4 of your chocolate chips.
Spray some oil or use parchment paper in your tray and add the mixture. Use the left over chocolate chips on top to garnish.
Bake in the oven for 15-20 minutes, use a knife if it comes out clean its done. Make sure you don’t over bake them or else they will become dry. I like my brownies fudgey and moist.
Once baked, take out the oven and let cool and then cut them equally. I start with the biggest piece usually!
Serve warm!
